Quyen Phan, co-owner of five Vinason Pho Kitchen locations across Washington, has leased 1133 Lake Washington Blvd Suite 50 for his upcoming Anchovies & Salt restaurant in Renton.

Phan described Anchovies & Salt as fine casual and elevated Vietnamese in an interview with What Now Seattle on Friday. “It will be extremely warm, full service, family dining with a bar and small plates,” he said. “We are offering a waterfront dining experience with a patio and private dining available that can accommodate large groups”

Phan also told us Anchovies & Salt will hold a capacity upwards of 300 and is hoping to open as early as mid-Summer or as late as the Fall 2023.

Sister eatery Vinason Pho Kitchen coins itself as a fast casual restaurant with its focus being on Vietnamese food “with love.”

“We believe wholeheartedly in sourcing responsibly, healthy, fresh, and most importantly, transparent,” according to the restaurant’s website — and you may have good fortune with their Pay it Phoward movement where they give free Pho to random customers to instigate kindness within the community.
