Co-Owners Avery and Ashely Hardin are giving Layers Sandwich Co. a mainstay soon to be located at 7900 E Green Lake Dr N.

The Green Lake location presented itself like a dream to the food truck owners that they couldn’t pass up. “We knew we wanted daytime hours around a body of water,” Avery Hardin told What Now Seattle in an interview on Thursday.
The new sandwich shop will run from 10 a.m. to 5 p.m., Wednesday through Sunday. The menu will be upgraded with breakfast items, specialty breads, salads, and seasonal vegetables along with their current staple items with the aid of a full-time pastry chef — and their weekly special will extend to a two-week special to give customers more time to get a taste before it’s gone.
“We want to give people more food,” Hardin said. “We can do a lot more than just sandwiches. And we are going to offer beer and wine now as well, including a special Layer’s Lager from Urban Family Brewing who have been a huge help to us. They’re family. No pun intended.”
Currently in a food truck, Layers has been receiving grand support from family, friends, and loyal customers to the point of many sellout days and a lot of back-and-forth to the commissary kitchen. “It was a lot to be that busy and keep up. We need a crew. We need a team. And it was always in our five year plan.”
Layers’ new home will be 1,700 square feet allowing for approximately 30 to 40 people with a patio outside. “Ashley is currently going with a Wes Anderson summer camp vibe,” Hardin told What Now Seattle about the shop’s design. And across the street is Green Lake with picnic tables and many options for customers to enjoy their food.
The opening is still to be determined, but ownership is aiming for summer 2023. Construction begins May 1, 2023 and Layers’ last food truck service is on the books for April 16, 2023 at Urban Family Brewing. “The new truck is going to a new home that we are super excited about turning it over to. The new owners of the truck will be announced in the coming months,” Hardin said. There are also some plans to rebrand Layers.
