A new chef-driven concept from an experienced culinary duo is coming to Seattle.

The Greenwood American Bistro will offer contemporary American dining with regional ingredients and flavors, such as pita that incorporates local sugar kelp. The concept’s philosophy is to blend fine-dining techniques and creative dishes with an accessible menu and friendly environment.

The bistro is the inaugural concept from Model Restaurant Group, a new chef-driven hospitality group from Grant Rico and Or’el Anbar, who met in culinary school.

Rico and Anbar are bringing vast culinary experience to the venture. Formerly the executive chef at Seabird on Bainbridge Island, Rico also has experience at renowned restaurants like Singlethread in California and Element 47 in Aspen, Colorado.

Anbar has a range of expertise in restaurant operations. His experience includes roles as the chief financial officer at Happy Corner Hospitality Group and a VP at Just Salad.

The Greenwood American Bistro will be located at the corner of Greenwood Avenue and N. 85th Street. The space was formerly occupied by The Lodge Sports Grill.
