According to a recent permit filing, Guillotine will soon open its doors in the Capitol Hill area at 410 Broadway E.

A representative of Guillotine was not immediately available for commentary upon What Now Seattle’s request.

While an official opening date has yet to be confirmed, according to an article from Capitol Hill Seattle Blog, “The new project with a solid dose of Seattle mixology is being built out this month in the space left empty by the exit of Southern-style cocktail joint Witness last spring after nearly 10 years of business on the street.”

“Seattle food and drink veterans Colin Smith and Andrew Larson will be stepping out from behind the bar — you may have made acquaintance on the Hill at Tavern Law — in a first-time collaboration at Guillotine. Larson has been mixing drinks on Capitol Hill for a decade. The new joint’s tagline promises “wellness and more.”

“We’re still learning what the recipe will be at the new Capitol Hill restaurant and bar Guillotine when it opens soon on Broadway. Any kings and queens might want to watch their step. It seems when it comes to cocktails, the guillotine holds a place similar to the legendary sidecar — 10,000 recipes that can vary from bartender to bartender, night to night.”
