According to a recent permit filing, Mt. Joy will be opening their first brick-and-mortar in the Pike/Pine area at 1531 11th Avenue.

“We will be opening this fall. We currently have a food truck that is open and serving food, which is our original location,” Robbie Cape, the co-founder and CEO of Mt. Joy, told What Now Seattle.

“The Mt. Joy brick-and-mortar menu is going to be an extension of its food truck roots. However, the restaurant will introduce exciting additions, including delectable dessert options and a breakfast program that promises simplicity and excellence. The hope is to extend our hours, making the restaurant accessible to a wider audience, especially those seeking late-night dining options.”

The essence of Mt. Joy lies in its dedication to regenerative agriculture—a concept that aims to restore the health of our planet and its ecosystems through farming practices that prioritize soil health and biodiversity. It all began when Robbie exited his previous venture, 98.6, and decided to channel his energy into a business with a significant environmental impact.

Inspired by the documentary Kiss the Ground, and the eye-opening book The Omnivore’s Dilemma, Robbie’s passion for regenerative agriculture ignited. He realized that the food supply chain needed to evolve, and the path forward was to build a consumer brand and restaurant that embraced this philosophy from the ground up.

“The single most important thing for the market to keep in mind around Mt. Joy, in my opinion, is that we are trying to do things a bit differently. At the end of the day, we recognize that has to start with an incredibly delicious sandwich, or fries, or wonderful food options. That’s what it’s all about, and largely where it ends. The rest of the story is the icing on the cake,” Robbie added.
