According to a recent permit filing, Cheese Room Seattle aims to open its doors in the Pine/Pike area at 1215 Pine Street.

A representative of Cheese Room Seattle was not immediately available for commentary upon What Now Seattle’s request.

While an official opening date and what Cheese Room Seattle plans to offer have yet to be confirmed, according to the permit, Cheese Room has filed for a tavern permit, amongst other permissions.

Behind Cheese Room Seattle is Park Han Management LLC. According to Washington Company Search, Park Han Management was incorporated on February 10th, 2024.

Listed on the business filing for Park Han Management LLC and the permit filing is Jung Han and Heon Soon Park. Jung is also stated to be behind Hanpark LLC on the company search, while Heon is listed on three additional active LLCs.

For the property itself, Cheese Room Seattle’s address listed on the permit filing is the former home of Ristorante Machiavelli. Ristorante’s company website speaks on its closure, stating, “In our nearly 36 years, we’ve been through a lot together.”

“However, the years since the pandemic have been full of obstacles for our Machiavelli family. You may have noticed that our windows have been dark this past week, and sadly, it’s time to say goodbye to our beloved Capitol Hill institution.”
