“My name is Trey Beattie and I own Sandwich Starr with my wife, Megan Lafler. We are hoping to open our Stadium location by the end of September if everything goes according to plan, with a soft opening aimed for the week of the 18th.”

“Sandwich Starr started in kind of a weird way. We were patrons of Edison City Alehouse regularly and they said they were looking to have karaoke and were looking for a host, so I volunteered. We continued to build our relationship with them and I would help out behind the bar from time to time.”

“Eventually, they told us that they were looking for another business to take over the kitchen space and partner with them. I had worked in restaurants for over 15 years, from fast casual to fine dining, and often ended up working in management, building menus, and helping streamline all kinds of aspects.”

“When I looked at the space and told them that a sandwich shop would be an easy option, I couldn’t stop myself and started crunching the numbers. Eventually, Megan and I leaped and decided to go for it. It all just kind of fell into place.”

“Initially, it was a side project as we both were working full-time positions, but when the owners of the building and Edison City Alehouse were unable to reach an equitable agreement in their lease negotiations, we had to leave the space.”

“Megan and I sat down and discussed whether or not we would continue Sandwich Starr and decided I would be stepping into it full-time. Partnering with Mike and Sausha at Edison City Alehouse allowed us the step up we needed to begin and we wanted to keep that going.”

“Sandwich Starr focuses on East Coast style sandwiches blended with West Coast flavors. We utilize local ingredients and try to build community, so patrons can look forward to interesting combinations, coffee and espresso drinks, featuring local roasters, local beer and wine, and a bright and whimsical aesthetic.”

“My favorite picture that we have in our decor is from Rosy Ghost Curios that we picked up at the Haunted Farmer’s Market. In addition to all of that though, we wanted to continue the support we were given at our beginning and wanted to extend that to artists as well. We will be continuing to host open mic nights with Katie Naylor, our friend, and a hilarious local comedian, art shows and galleries, and live music events.”

“Some menu items from our previous menu will be continued into the new space, like the Starrk and the Serenity, as well as expanding our selection. The Starrk is the first sandwich we created and still my favorite, featuring roast beef, salami, brie, tomato, red onion, and sweet chili mayo. It won’t be going anywhere.”
