“Embarque Whiskey Grill will open before Thanksgiving this year. Embarque Whiskey Grill is a culinary love letter to the region’s diversity, with a special nod to Seattle’s Vietnamese community.”

“Familiar American menu offerings are lovingly touched by unique Vietnamese flavors and French techniques. Menu highlights include a signature whiskey glazed burger, bánh mì and panini, seasonal and locally sourced seafood, and family-friendly favorites like mac and cheese. The bar at this full-service casual dining restaurant will highlight distilled spirits from around the world, especially those crafted locally,” Erin Frank, Director of Brand Growth and Communications, told What Now Seattle.

While the specific offerings of Embarque and the opening date have yet to be confirmed, Bambuza Sea-Tac Ventures LLC, the permit filer for Embarque, was incorporated originally back in 2018 according to Open Corp.

Upon further research, for both the recent permit filing and the business incorporation, the filer is listed under Daniel Nguyen. Daniel is the co-owner of Bambuza Hospitality Group.

In the heart of a Vietnamese kitchen, Daniel Nguyen’s family gathered around the stove with their beloved matriarch, Mama Lan. There, they didn’t just cook; they state to have created an experience steeped in family tradition and culinary passion. The Nguyen family, inspired by their rich heritage and a desire to share their culinary treasures, embarked on a journey that would ultimately lead to the birth of Bambuza Hospitality Group.

The journey began with a simple realization: the delicious flavors and cherished family recipes should be shared with a wider audience. Thus, the Nguyens started selling their delectable spring rolls at local farmers’ markets and events.

Fast forward to today, and Bambuza Hospitality Group stands as a testament to the enduring legacy of the Nguyen family’s culinary expertise. While the essence of their family recipes lives on in their beloved brand, Bambuza Vietnamese Kitchen & Bar, the company has expanded its horizons. It now includes in-house brands such as Ninth & Pike Artisan Kitchen and Embarqué, alongside popular partner brands like The Coffee Bean & Tea Leaf and Sambazon, according to the company website.
