“90 days from now is my goal, depending on a few different things, for our opening date. How Hiker Brewing came to be was when Covid hit, I went back to school and got a degree in brewing. I enjoy the history of different beer styles; There are over 100 different types, and I think most people are used to maybe five of those. I’d like to concentrate on the more unique styles out there,” owner Cody Stiles told What Now Seattle.

“One of my class projects in college was creating a business. The more I got into the project, the more I realized the viability of the business model. I enjoyed learning about beer and also wanted to have a place where people could come and be back together after the pandemic.”

“In the case that the Burlington location doesn’t work out, I am also looking at two other options, those being in Anacortes and Sedro Woolley. Right now Burlington is the planned spot, and I’d like to be close to hiking places.”

“There will be a lot of promotion of the outdoors, fundraisers, and potentially work parties, to name a few of my ideas. I’m just really excited to combine the outdoors and the history of brewing in America and around the world.”

According to Pacific Continental Realty LLC, the property for Hiker Brewing will be a part of the Burlington Plaza. “Construction of the 4 buildings of the former Shoppes at Burlington outlet mall was completed between 1989 and 1993. Ownership of the property changed several times until 2007.”

“In March 2022, the mall’s mortgage lender sold the entire project to Burlington Investment Properties LLC. The property has now been given a new name – Burlington Plaza – and is also being given a new look.”

“All 4 buildings are now receiving new roofs, which will be followed immediately by a new exterior color scheme. Landscaping throughout the entire 19-acre site is being improved dramatically. Plans for other changes are in process.”

484, the property for Hiker Brewing Company, is listed to be 2,100 square feet. With all of the units being considered, the plaza is approximately 66,000 square feet.
