According to a recent permit filing, Giddy Sloth Cafe will soon open its doors in the Pinehurst era at 12510 15th Avenue NE Suite E.

“Depending on a few factors with the remainder of our build-out, inspections, and permitting, we are aiming to open pretty soon,” Carlos Chaves, the owner, told What Now Seattle.

“Giddy Sloth is about the Costa Rican experience, and our goal is for the customers to connect to what Costa Rica has to offer. We have 100% specialty, single-origin Costa Rican coffee with a wide range of brewing methods, including Costa Rican chorreado.”

“We will also offer an assortment of Costa Rican pastries and classic sandwiches. In a month or two, we will also offer coffee cocktails, wine, beer, and Costa Rican cocktails. We partner with farms that are environmentally conscious and that take care of their farmers.”

“Giddy Sloth is more than just coffee; it’s about an experience: the music, the culture, the welcoming atmosphere of Costa Rica. With every sip of our coffee, we want you to taste the richness and diversity of our mountains, our beaches, our cities, and our countryside.”

“It’ll be good for people to stay tuned into our Facebook or Instagram because we will be bringing Costa Rican artists, musicians, and baristas to make the experience as real as possible, and we really want to bring the “Pura Vida” vibe.”

According to the company website, “I am Carlos. I was born in Costa Rica. My family is from the Central Valley. Most of my childhood was spent in Plaza Viquez, a bustling neighborhood in downtown San Jose. A tight-knit family was always around and I had great memories of playing with my cousins and solving the proverbial “world-hunger” with my brother.”

“I’ve been drinking coffee since I was 4 years old (not uncommon in a country where coffee is nicknamed “the gold grain”). Some of my early childhood memories include helping my grandma set up the table for coffee time – just a few short hours after the two-hour lunch we would typically have and where my uncles, my aunt, and sometimes my parents would break away from work so that we could share a meal.”

“I moved to the US when I was 14 years old, but my love for coffee has followed me always. My memories of sitting around the table with family and friends resonate with a strong sense of home. The idea to bring this feeling to the States sparked on my most recent visit back to my childhood home.”

“I want to present this strong coffee tradition and complement the fantastic coffee scene in Seattle, the city that adopted me.”
