A representative of Anejo Tequila Bar was not immediately available for commentary upon What Now Seattle’s request.

While an official opening date and what Anejo plans to offer have yet to be confirmed, according to the permit filing, behind Anejo is El Federales LLC.

According to Washington Company Search, El Federales LLC was incorporated on November 12th, 2021. Two people are listed on El Federales LLC’s business file, with those two people being Shawn Roten and Marta Rothnie.

The permit filing has four different permissions listed, with one of them being for the option of a spirits, beer, and wine lounge. When it comes to the property itself, according to Xome, “8032 Falls Ave SE, Snoqualmie, WA is a restaurant property that contains 11,602 Sq. Ft. sq ft and was built in 1985.”

For tequila, the production process of tequila typically involves harvesting mature blue agave plants, which are then harvested and processed to extract the sweet juice known as aguamiel. This juice is fermented and then distilled to produce tequila.

Tequila is available in various types, including blanco (silver), reposado (rested), añejo (aged), and extra añejo (extra aged), each with distinct flavor profiles and aging characteristics.
