While an official opening date has yet to be released, according to the permit filing, Kimchi Box will be a spirits, wine, and beer rest lounge.

For those that are unfamiliar, Kimchi is considered to be a traditional Korean dish known for its diverse and flavorful profile. Primarily made from fermented vegetables, with Napa cabbage and Korean radishes being common choices, kimchi is seasoned with a variety of ingredients such as chili pepper, garlic, ginger, and fish sauce.

The mixture is then left to ferment, allowing the development of its distinctive tangy and spicy taste. Kimchi plays a prominent role in Korean cuisine and is celebrated for its versatility, as it can be enjoyed on its own, as a side dish, or as an ingredient in various dishes, showcasing the rich cultural and culinary heritage of Korea.

When digging a bit further into information on Kimchi Box, both the permit filing and OpenGovWA state that Kimchi Box is under SC Maple Corporation. Both the permit filer and business agent for Kimchi Box and SC Maple Corporation are under Jin Suh.

OpenGovWA states that SC Maple Corporation was incorporated in January of 2022. It is still listed as an active business filing.

When it comes to the actual space, Kimchi Box will reside at what is known as the Center Street Plaza. According to Office Space, the building was originally built in 1988 and is approximately 1,200 RSF.
